Rainbow Cake

Ingredients for the Rainbow Cake:

3 cups all purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

4 large eggs (room temperature)

2 cups granulated sugar

1 tablespoon vanilla extract

3/4 cup canola oil

1 1/4 cup milk (room temperature)

Gel food color (red, yellow, green, blue)

 

Ingredients for the Frosting:

250 g butter (soft)

375 g icing sugar

3 teaspoon vanilla extract

30 ml milk or cream

1/4 teaspoon salt

I promised on Instagram to post the recipe of this beautiful rainbow cake today. So here’s a yummy and colorful activity for you. 🙂

 

Instructions for the cake:

Preheat the oven to 170°C (340°F) Mix the flour and baking powder in one bowl and set aside for later. Stir the eggs and the sugar in another bowl. Add salt, vanilla extract and canola oil to the egg-sugar-mixture and stir again. Now add a third of the flour mix and stir. Then add a third of the milk and stir. Keep on doing this alternately until everything is mixed in.

 

Split the batter into five different bowls and color it. Grease your cake tin and fill in the first layer of your cake (you have to bake every color separately). Bake for about 10 minutes. Let it cool and transfer it to your cake plate. 

 

Instructions for the frosting:

Now it’s a good time tp prepare the frosting. Put the butter in a bowl and let it whisk by your food processor for about 3 minutes. Make sure it catches all of the butter (you probably have to scrape the butter from the sides of the bowl every once in a while). The butter should get creamy and light. Switch to low speed and screen in the icing sugar. Beat on high speed at the end to make sure there are no lumps left.

 

Add the vanilla extract, milk and salt. Now beat again on high speed for at least 3 minutes. Again scrape the sides of the bowl. In case the frosting is too stiff you can add more milk or cream (no more than 30ml) and in case it’s too fluid you can add more icing sugar (no more than 125g).

 

Between every cake layer you spread some of the frosting so they will stick together. To make this pretty cake look even more cute than it already does: Add the rest of the frosting on top of your last cake layer and you’re done!
